- 560g Luv-a-Duck Peking Flavoured Duck Breast Pancake Kit
- 1 small red capsicum, deseeded, chopped
- 400g can black beans, rinsed, drained
- 1 large tomato, chopped
- Fresh coriander sprigs, to serve
- 2 Lebanese cucumbers, peeled into ribbons
- 2 green shallots, shredded
- 1 avocado, mashed
Method
- Step 1 Preheat oven to 180°C/160°C fan forced. Line 2 large baking trays with baking paper. Open the Peking Duck Kit. Separate the pancakes and place on prepared trays. Reserve the duck and hoisin sauce. Spray the pancakes with oil. Bake for 5-10 minutes or until golden and crisp. Break into large pieces.
- Step 2 Meanwhile, warm the duck following packet directions. Chop or shred the duck. Place in a bowl. Add the capsicum, black beans and tomato. Season. Top with coriander.
- Step 3 Divide pancakes among serving plates. Top with cucumber ribbons, duck mixture, shallot and avocado. Drizzle with reserved hoisin sauce.
