Ingredients (4)

  • 1 bunch fresh mint, leaves picked, finely chopped
  • 1 tbsp caster sugar
  • 80ml (1/3 cup) boiling water
  • 5 tbsp apple cider vinegar

Method

  • Step 1 Combine the mint and sugar in a small heatproof bowl. Add the boiling water and stir until the sugar dissolves.
  • Step 2 Add the cider vinegar. Season with salt and pepper, and stir to combine. Set aside for 1 hour to develop the flavours.
